New Beers In May!

It’s hard to believe it’s May and that means our latest seasonal releases are ready to enjoy!

This month, we’re excited to introduce two brand-new beers crafted for warmer days and easy sipping. First up is Feet Up Thursday — a bright, tropical sour that’s perfect for kicking back in the sunshine. We’re also bringing you a bold, West Coast twist on our beloved IPA, Looper — same great character with a fresh new hop-forward edge.

Stay tuned as we take a closer look at what to expect in terms of flavour, appearance, and production — plus where you can get your hands on them to sip on in the sun.

*NEW* West Coast Looper

What Exactly is West Coast Looper?

West Coast Looper is our bold and refreshing West Coast interpretation of our flagship hazy IPA, Looper . While the original Looper pays homage to the classic East Coast style—with its pillowy mouthfeel, juicy hop character, and haze-laden body— West Coast Looper brings a crisp, clear, and hop-forward twist to the table.

Still bursting with hops, West Coast Looper dials back the haze and leans into a cleaner profile, allowing the bright citrus, pine, and resinous notes to shine through with a more pronounced bitterness and a dry finish that keeps you coming back for more. It's our way of blending the best of both coasts—celebrating the tropical juiciness and hop saturation of the original Looper while embracing the clarity, bite, and refreshing drinkability of a true West Coast IPA.

Tasting Notes & Colour...

You will still get the lushous hop notes as our traditional looper, bit hits of citrus, lemon, lime and some grapefruit but with a much more bitter back bone coming from the higher IBU in this beer.

The beer has a lower finishing gravity due to a west coast style chico yeast, alongside a slight reduction in adjuncts in the recipe to reduce the body down and increase the crispness of the finish.

How Does It Compare With OG Looper?

Looper and West Coast Looper should compliment each other really well, both big hoppy beers but showcasing each style West and East cost IPA in our very own Looper way!

Production...

When we approached making West Coast Looper, we took a few steps to adjust the recipe from East coast to West Coast, reducing the Oats and Wheats from the grain bill, this helps reduce the body and mouthfeel. We then chose a chico style yeast from WHC, with the aim to reduce down the final gravity of the beer and add a crisp finish when drinking.

We increased the bittering hops to meet the higher IBU's of the west coast style but the aroma and flavour hops remain the same. From then we fined this beer to get a crisp clear finish to the beer and then carbonated slightly higher than we would with our standard Looper.

*NEW* Feet Up Thursda'

What Exactly is Feet Up Thursda' ?

Our first sour of the year is packed with tropical fruit, punching you in the face with bags of pink guava, grapefruit and mango.Finished with a subtle sourness just tingling the back of your gums to balance everything out. The perfect thing to drink when you still have a Friday to go. After all, everyone deserves to put their feet up on a Thursda'.

Production...

There are several traditional methods that use bacteria to sour and lower the pH in the beer, this could be with Lactobacillus and Pediococcus or a wild yeast like Brettanomyces. Some modern sours use lactic acid producing yeast that produces the acid alongside ethanol and co2, these can offer a quicker and lower risk beer due to its reduced contamination risk within a brewery.

At FCBC, we use philly sour lactic producing yeast to sour our beers, we have a barley and wheat grain bill, minimal hop additions and then some maltodextrin to help give the beer more body, and some dextrose to help encourage the lactic acid production during fermentation. A few days into the fermentation we add a secondary yeast to help drive the attenuation of the beer and then once the beer is nearly finished its fermentation, we add the fruit puree.
