Role Overview

Full Circle Brew Co. is opening an exciting new bar and restaurant at Fenwick in Newcastle, bringing an elevated fried chicken and burger concept to the city centre in partnership with Peckin' Order. Recipes and SOPs are provided, so as Kitchen Manager you'll be focused on execution, team, and cost control rather than menu development — leading the line and cooking every service, and keeping tight control of labour, GP, and wastage throughout the concession. The kitchen runs to store hours through the week and on Sundays, with later closes Thursday to Saturday — a genuinely better work-life balance than most hospitality kitchens offer. Salary and structure will reflect experience.

Location: Fenwick, Newcastle

Contract: Fixed-Term (2 years), Full-Time

Start date: October 2026

Hours: 40 hours per week

Salary: £29,000–£31,000, dependent on experience + tips

Key Responsibilities

•      Take full ownership of the kitchen operation: staffing, standards, cleanliness, compliance, and output quality.

•      Lead the line and cook during service — this is a hands-on, on-the-pass role, not a desk-based management position.

•      Follow the provided recipes and SOPs exactly, ensuring every dish leaves the kitchen consistent with spec, service after service.

•      Maintain the high standards of presentation and consistency that a premium city centre venue demands — every plate, every service.

•      Recruit, train, and develop kitchen team members, building a reliable and capable brigade from the ground up.

•      Manage all food ordering, stock control, and supplier relationships, minimising waste and keeping food costs in line with agreed targets.

•      Take tight ownership of kitchen costs: schedule labour against sales, hit agreed food GP targets, and control wastage — reporting weekly against target.

•      Maintain rigorous HACCP records, allergen controls, and food safety standards at all times.

•      Work closely with the Bar Manager to ensure food and drink service is seamlessly coordinated.

•      Monitor kitchen performance and report on food cost, waste, labour cost, and any operational issues to the management team.

•      Ensure all equipment is properly maintained and flag any issues promptly.

What We're Looking For

•      Proven experience as a Kitchen Manager or similar senior kitchen role, ideally within a fast-paced, high-volume kitchen with a similar concept (burgers, fried chicken, or similar).

•      Strong, hands-on cooking ability — comfortable leading the line and cooking to spec, under pressure, service after service.

•      Strong understanding of food cost management, stock control, labour scheduling, and minimising waste — with a track record of hitting GP and labour targets.

•      Excellent knowledge of HACCP, allergen legislation, and food hygiene best practices.

•      A natural leader — able to build a kitchen team quickly and maintain standards under pressure.

•      Comfortable operating within a defined concept and recipe set, without needing scope for menu creativity.

•      Level 3 Food Hygiene certificate preferred.
